I want to fly to belize or guatemala and fly home from panama.Is it poss to buy an open return air ticket ?

The airlines that fly those routes are who you should be contacting. You should be able to buy an open date return but some countries, and I know Guatemala is one, won't allow you entry if you don't have a return ticket or proof of ongoing travel before your visa expires and it is usually the airline that has to enforce it.
